The Environmental Health Department has issued a reminder for residents to prioritize food safety during Thanksgiving celebrations. The department emphasizes the importance of safe practices from grocery shopping to cooking and handling leftovers.
“Our mission is to protect the community by promoting safe food practices,” stated Dr. Mark DiMenna, Deputy Director of the Environmental Health Department. “We want everyone to enjoy a holiday meal without worry, knowing they’re following steps to keep their families safe.”
During shopping, it is crucial to ensure perishables like turkey remain cold by picking them up last and using insulated bags if necessary. Turkey packaging should be intact to prevent cross-contamination.
For thawing turkey, the department advises refrigerator thawing with 24 hours per four to five pounds or cold water thawing at 30 minutes per pound, ensuring the water is changed every half hour.
In home preparation, handwashing and sanitizing surfaces are key in preventing foodborne illnesses. Separate cutting boards should be used for raw meat and ready-to-eat foods. Cooking temperatures should not fall below 325 F, with a food thermometer confirming an internal temperature of 165 F in various parts of the turkey.
Leftovers should be stored in shallow containers and refrigerated within four days or frozen for longer storage.
